In this article, we will how to cook jordanian mansaf for some non-Arab people who do not know its ingredients and what this food is ....? this food is considered one of the oldest famous Arab dishes, especially in its original country, jordan
 
It is a meal that contains high calories and is preferably eaten in the winter, because it contains yogurt, animal ghee, lamb and rice, therefore, it is a delicious meal, but it is very fat

                                                                                     Ingredients of frozen or dried jordanian yogurt 

One kilogram of goat's or lamb's milk or yogurt 

Quarter of a kilo of coarse table salt

                                                                                                                                            How to prepare

Put the milk in a saucepan over a low heat, while stirring and put salt on it with constant stirring

This method takes a quarter of an hour while removing the foam resulting from boiling

Then we bring a piece of cotton cloth and put it in a bowl, Then pour the milk mixture into the cloth and tie the cloth well, we suspen the milk inside the cloth at a moderate temperature until the milk is drained of water, preferably a day or tow until it drains well, After it is drained, we open the cloth, so the milk becomes a little solid, we make it into  balls the size of a hand, Then put the yogurt balls in the air for 8 hours until they become dry, Then we sore it and it is ready

                                                                                                                                                   Ingredients

Tow balls of yogurt dried was mentioned in the beginning of the article

Two kilograms of lamd, chopped into the size of your hand

A kilo of Egyptian or Arabic rice, a small grain

Tablespoon butter or animal ghee

Vegetable oil grams 100

Small spoon of salt

Turmeric yellow teaspoon

Peeled onion

Garlic lesson

Fried almonds for garnish

                                                                                                                                            How to prepare

Put the meat in a pot to boil and cover it in water over a medium heat, let it boil while removing the impurities resulting from boiling, when the boiling water becomes clean, add onions and garlic, Then let it boil for about an hour and a half until it is completely cooked

Then we take boiling water and put it in a bowl, and put the meat in another bowl

Soak the yogurt balls in tow cups of hot water, Then when the milk becomes soft, we grind it with water in the blender, Then put the yogurt on the meat in a pot to boil with a cup of boiling meat water, Then add a spoonful of butter to it, Then let it boil for half an hour

Then we come with rice, Soak the rice for half an hour, Then wash and drain the rice, put vegetable oil in an bowl and we add rice to it we roast the rice on a medium heat, Then pour over the rice tow cups of boiling meat water and put a spoonful of salt and a small spoon of turmerice on it, Then we leave it to cook on a low heat for quarter of an hour with the pot closedm until it is done

Toast some almonds for garnish, Then we bring a large round food tray, pouring rice into the tray, put the pieces of meat on top of the rice, pour tow cups of yogurt over the rice and meat, put the extra yogurt in the side cups, garnish the dish with toasted almonds
